The Wedding Menus and Corporate Menus are carefully thought out, and are designed to showcase the finest, freshest Tasmanian produce available. Our menus are flexible - please discuss your options with one of our friendly consultants.

- Escalopes of Pork Fillet, BBQ with curry spices served with Chefs own Mango & Apple Salsa
- Skewers of Chicken marinated in Peanut Coconut Relish
- Scallop and Prawn Skewers served with Salad Greens
- Penne with your choice of Carbonara Sauce or Napoleon Sauce
- Sweet Potato Gnocchi with Spinach & Sage Cream
- Shimp Cocktail on a bed of Mesculin finished with Cocktail sauce & presented with a Tiger Prawn
Entrée 3
- King Prawns grilled with Mango & Orange Honey and Chilli Sauce
- Atlantic Salmon poached with Potatoes, Greens and Lemon Mayonnaise
- Chicken Tenderloins and King Prawns marinated with Mediterranean Spices, skewered and BBQ. Served with Chefs own Sundried Tomato Aioli
- Fresh Chicken Breast sliced and piled on salad greens and avocado pulp
- Fresh Calamari and Prawns presented on salad greens and lemon slices
- Smoked Salmon Penne Pasta served with Smoked Salmon, Capers, Dill and a touch of cream
- Pork Roulade fillets encasing sweet apricot and almonds and served with a spicy Apple Sauce
- Cajun Prawn Caesar with pan-fried Tiger Prawns, coated in Cajun spice and served on a bed of Cos lettuce, crispy bacon, croutons and Parmesan cheese

Mains Menu 1
- Traditional Roast Pork served with Chat Potatoes & Fresh Seasonal Vegetables presented With Crackle, Apple Sauce and Demi Glaze
- Rosemary and Mint Roasted Lamb Served with Chat Potatoes and Fresh Seasonal Vegetables And Demi Glaze
- Roasted Seeded Mustard Beef Served with Chat potatoes and Fresh Seasonal Vegetables and a rich Demi Glaze
Mains Menu 2
- Bush Tomato & Chicken Breast served on Potato Mash & Salad Greens Drizzled with Italian Tomato and Basil Sauce
- Roasted Yearling Scotch fillet, oven roasted Roma tomatoes and dressed baby spinach finished with a rich Beef jus
- Roast Turkey Buff with a sweet Cranberry glaze, served with a raisin and pistachio risotto cake
- Sticky Lamb Shanks, slow roasted and served on a bed mashed roasted root vegetables with a deglazed minted Jus
- Tasmanian Atlantic Salmon served with Garlic Chat Potatoes with Guacamole Pulp and Red Onion, drizzled with a Caper Dressing
Mains Menu 3
- Eye Fillet Steak pan fried to medium and presented on a Wild Mushroom Risotto, drizzled with a Jus Lie and served with Chat Potatoes and Salad Greens
- Beer Battered Barramundi Fillets (when in season) on Potato Mash and Seasonal Salad Greens with either tartare or seeded mustard sauces
- Seafood Tasting Plate:
- Consists of: Moreton Bay Bug Meat, Coconut & Honey Fried Prawns, Tasmanian Scallops, White Fish Portions, Tasmanian Oysters with Wasabi Paste
- Country Game Plate:
- Red Currant Quail and Double Roasted Duck in a Chilli Plum Glaze presented on Asian Noodles
Dessert
- Sticky Date Pudding served with Butterscotch Sauce and Ice-cream
- Individual Old Fashioned Raspberry Apple Crumble served with a Cinnamon infused Chantilly Cream
